Decaffeinated Teas are made by exposing the processed and dried tea to a compound that removes the caffeine from the tea. The caffeine is then scrubbed from the chosen compound and the process is repeated until the desired level of decaffeination is achieved. Of the three compounds currently used to decaffeinate tea all are considered safe by the FDA, but only the CO2 method is trusted to be safe by the natural foods industry. This is the method that is employed for Devi Tea’s decaf teas.

Super critical carbon dioxide (highly pressurized CO2) is believed to be the healthiest and most environmentally sound way to remove caffeine. It does not leave a residue and most of the flavor and beneficial compounds, such as the polyphenols, are left intact. The process involves placing the tea into a sealed chamber and exposing it to CO2 at 250 to 350 times atmospheric pressure. The CO2, at this level of pressure, is still a gas but is as dense as a liquid and is allowed to circulate and dissolve the caffeine from the tea. The CO2 is then pumped out of the chamber and into another chamber where it is “scrubbed” free of the caffeine. This process is repeated until the desired amount of caffeine is removed from the tea.
