Devi Tea :: • Yellow Tea
Yellow Tea is grown only in China and is very rare. The bud and first leaf are plucked and heated like green tea, but not to the three to five percent moisture that usually remains. Instead it is only partially dried, to about fifty percent. It is then carefully wrapped in paper in small bundles and left to cure for 10 to 24 hours before being handled and heat-dried to completion. The resulting tea leaves are yellow and the flavor of the liquor is complex and delicious. Any opportunity to try yellow tea should not be missed.
