About Lion's Peak Dragon Well - Superior Grade Green Tea Dragon Well is one of the most renowned Chinese green teas. True Dragon Well, also known as Lung Ching or Longjing, is grown in the Zhejiang Province in the West Lake area. Tea has been grown in this region since the Tang Dynasty (8th century A.D.). Dragon Well tea is comprised of one leaf and one bud pluckings that are pan-fried immediately after being picked in the early morning during the first flush of the spring season. The process of pan-frying is done twice in small batches. A series of 10 special hand movements are incorporated by the tea master handling the tea in the wok. The result is a beautiful dark green, shiny, flat leaf ready for your gaiwan or teapot. This Lion's Peak Dragon Well is from the renowned Lion's Peak in the mountains of the West Lake region in the Zhejiang province. It is a very rare and special harvest Dragon Well. A Few Words On Taste The brew is yellow/ green, delicate and refreshing. The nose is herbaceous spring grass with a hint of nuttiness. The medium-body liquor has a light nutty flavor and is sweet and smooth. The finish is long and enjoyable. Try it alone, then add your preferred natural sweetener if so desired. Milk is not recommended. Brewing Instructions Fill your kettle with freshly drawn water from the purest available source. Heat the water to about 170 ° F. Measure approximately 2 grams. of tea per 6 ounces of water. Place the tea in your preferred brewing vessel: teapot, gaiwan, Yi-Xing pot, filter basket, large tea ball, etc. Pour the heated water over the tea and steep for 2 minutes, (if a longer time is allowed the tea may become bitter) then serve.
