In general, standard usage runs 2-3 grams of tea per 6-8 ounces of water. This will measure about 1 rounded teaspoon for a mid-sized leaf. One level teaspoon of a medium to small leaf sized tea (e.g. English Breakfast or Darjeeling blend) will weigh about 1.5 grams. One level teaspoon of a large leaf tea (e.g. Silver Needle or Wen Shan Bao Zhong Oolong) can weigh as little as 0.8 grams. A tightly rolled oolong or green tea (e.g. a Tung Ting oolong or a Jasmine Pearl) can weigh almost 2 grams per level teaspoon.
While brewing tisanes (also referred to as herbal tea) generally less is required. For example 2-3 grams of mint for 6 ounces of water would just about knock you over.
It can appear complicated, but it’s not really. Experiment with leaf quantity and you will find your preferred strength. Taste your tea early in the steep. If it seems strong decant it and cut the brew with hot water. The leaves will then be ready for a second steep.
