Oolong Tea describes a class of tea that is neither green nor black, but somewhere in between. Oolong is often referred to as semi-fermented. This is actually a misnomer, as the tea is not fermented but rather partially oxidized.

The leaves are plucked from certain varieties of Camellia sinensis and then undergo very detailed processes of withering, rolling, drying, and even roasting, with each aspect specific to a desired outcome. An Oolong tea can be as little as eight percent to as much as eighty-five percent oxidized. The complexities of flavors and textures found in Oolong tea are a delight to connoisseurs. The Oolong varieties have less caffeine than black tea, yet more than green tea. They are most often enjoyed without the addition of sugar, and milk is not recommended.
